how do you know that the 'pinch' measuring spoon is exactly a pinch? And wouldn't a pinch depend on the person?
No, believe it or not, a "pinch" is a real measurement, referring to 1/16 of a teaspoon.
Do you know why there isn't a 'dash' measurement? And if not, do you know if that's a real measurement too?
A "dash" is 1/8 of a teaspoon, which makes it equivalent to two "pinches". So, if you need a dash of an ingredient, simply use the pinch spoon twice.
how can you exactly measure an ingredient, does it need to be heaping or as flat as the top of the oval spoon???
You would make it flat across the top of the measuring spoon.
The picture shows a 1 tsp spoon, but you said that you don't plan to sell a set that includes 1/3 tbsp. Are you telling me you're going to remove the 1 tsp spoon from each set? Doesn't that seem spiteful? I'm not sure I can marry you, now.

On these measuring spoons, are they highlighted anywhere on them so that the sizes are easily readable? The biggest problems with spoons and cups, is that the sizes are the same color as the products.
The measurements are embossed on the handle of the spoon. They are not a different color.

Yes, a pinch can and always has been measured as approximately 1/8th of a teaspoon. Some manufacturers even have spoons which include a "smidgen".
